AND NOW FOR SOMETHING A LITTLE DIFFERENT!!
Unlike many other parts of the world, the holiday season in South Africa, conjures up sunny skies, hot temperatures and lazy days beside swimming pools or at the beach. While those up north get out their winter woolies, stoke up the fires and plan their hearty, heavy meals…. we look forward to our seasonal produce and lighter meals.
With this in mind here isa a very simple, tasty recipe, ideal for this time of the year…
WATERMELON AND ROCKET SALAD
Ingredients
Baby Rocket leaves OR ( flatleaf parsley and fresh chopped mint)
Seeded watermelon, diced
good olive oil
freshly squeezed lemon or lime juice
salt and freshly ground black pepper
Parmesan cheese OR Feta

Directions
Place the rocket and watermelon in a large bowl. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Pour enough dressing on the rocket to moisten. Toss well. Shave the Parmesan into large shards and sprinkle them on the Rocket and watermelon.
If you are using Feta, cut or crumble over the salad. Sprinkle with salt and pepper and serve.
OPTIONAL EXTRAS
1 small red onion, pitted black olives, Balsamic Vinegar / Glaze
